Could we have a "Log Out" button accessible on the external auth parameter from the workspace creation UI? Similarly, could we also change the "unlink" button to something like "log out" instead.

It's not a blocker, just believe it would be a UX improvement in communicating what unlinking entails, in addition to making it more accessible rather than having to navigate to the settings page.

Use-case is for switching between external-auth accounts more seamlessly, especially when I'm trying to clone projects only accessible to certain accounts. What I do currently is if I spin up another workspace that needs to clone a repository from another account, I'll have to navigate to the settings page, unlink, relink to new account, go back to templates/workspaces, create workspace from template.
