My daughter and I have been try our hand at resin crafts and have been struggling to get it crystal clear again after we’ve sanded a rough side. What’s the secret to this? We’ve tried progressively using finer grit sandpaper and have noticed that helps but it’s still a bit cloudy.

The quickest and easiest solution is to add a thin layer of new resin.

If the object you made is small, you can try dipping it entirely in resin and then remove excess resin while it's still liquid. Obviously you'll have to hold the object somehow. Some people fix a pin or toothpick to the object with a tiny drop of super glue. A block of styrofoam or a sturdy clamp can act as a holder while the resin cures.

If the object is flat or has reasonably big and even surfaces, you can add a fresh layer of resin to each side individually and let it completely cure before repeating with the next side. You can fill a small plastic container with dry sand to hold the object in position while it cures. Make sure it's absolutely level or the resin will pool on one side.

If none of that is possible, then the only way is to polish the object. Sanding with increasingly fine sandpaper is only half of the work, you then need to polish it with a polishing paste. As Virolino mentioned in the comments, there are many video tutorials online and seeing it is much better than reading a text about it.
